Coconut flour is not actually “flour” in the way we normally think of it; it contains zero grains, zero nuts, and is made completely of pure coconut.  Rather, Coconut Flour is a delicious, healthy alternative to wheat. It can be used in breads, cakes and pancakes for a gluten free alternative and works well combined with other flours such as almond flour or buckwheat flour. It is high in fibre, low in digestible carbohydrate, and is a good source of protein.
